Vegan challenge: day 9

After going out for dinner last night & surrounded by yummy looking non-vegan food, I had major food envy especially since I couldn’t have my fave soup – seafood chowder. Just 3 weeks to go! 

  • Breakfast: toast and hummus with green tea 
  • Lunch: went to Boojum and got veggie corn tacos topped with lots of guacamole, beans and salsa 
  • Dinner: made a stir-fry of quorn chicken & broccoli & mushrooms with boiled rice 
  • Snacks: grapes and mixed nuts
