Only 2 more days left in my one month vegan challenge!
- Breakfast: mixed it up slightly and swapped my usual Thai sweet chilli hummus for the jalapeño and roast pepper hummus with green tea.
- Lunch: toast with Thai sweet chilli hummus and avocado, McCoys salt and vinegar and a mandarin.
- Dinner: made a rice noodle and veggie stir-fry with green beans, broccoli, bok choi, chestnut mushrooms, an orange pepper, leeks and garlic. I was really happy with how it came out and made a massive wok-ful to keep for lunch tomorrow but the two of us gobbled the lot.
- Snacks: grapes, a banana, fig rolls.
